Ingredients

  • 400 ml (1 can) full-fat coconut milk
  • 150 g (3/4 cup) granulated sugar *

Instructions

  • In a pot on medium heat, bring the coconut milk and the sugar to a boil. Stir the mixture a few times. Turn the heat down to low and simmer for 40-45 minutes until the mixture is reduced by about half (once it starts to simmer, do not stir, otherwise, it can crystalize). Remove any foam from the top while it is simmering.
  • Remove the pot from the heat and carefully pour the condensed milk into a jar. Let it cool completely before putting on the lid (it will thicken more as it cools).
  • Store in the fridge for up to 3 weeks.

Notes

* Sugar: You can use brown sugar or coconut sugar; however, it will make the condensed milk darker. I like to use organic white cane sugar.

Storing:

Once it cools down, store it in a glass jar with a tight lid in the fridge for up to 3 weeks.
